Pancakes!



My recipe for soft, delicious pancakes!

Ingredients:

  • 1 cup of tea self-rising flour (for cakes)
  • 140 gr milk
  • 1 tablespoon of melted butter for the mixture
  • some sunflower oil for frying
  • 1 egg
  • 1/4 level teaspoon salt 
  • 1/2 teaspoon of vanilla extract, or some lemon zest

Preparation:

1. Whisk the egg in a bowl until it becomes frothy. Add the vanilla extract or the lemon zest and whisk a bit more.

2. Heat the butter in a saucepan over a low fire until it melts. Then remove from the fire, add the milk and stir with a spoon.

3. In a larger bowl sift the flour. Add the salt and (optionally) the sugar. Mix very well with a spoon.  Add the whisked egg and the mixture of milk and melted butter. Whisk all these ingredients well until they form a homogeneous batter. Do not overmix it. 

4. Oil a nonstick frying pan with a little sunflower oil and place it on medium heat. When it gets hot drop 2 tablespoons of batter for each pancake. Wait until bubbles form on each pancake and its edges have turned brown before you turn it over to cook on the other side too. 

5. Serve the pancakes hot with your preferred topping!

  • honey and cinnamon
  • berries and icing sugar/whipped cream
  • warm chocolate ganache and roasted hazelnuts or almonds
  • yoghurt, fresh fruit and honey
